Paleo Sloppy Joe

This past Sunday, I made Paleo sloppy Joe. Whenever I think of sloppy joes, I can’t help but sing the “Lunchlady Land” song by Adam Sandler…

You will need ground beef (I use organic grass fed beef from Wegmans), yellow onion, green bell pepper, tomato sauce, tomato paste, apple cider vinegar, dijon mustard, garlic, parsley, dates, and salt.

Brown the meat and then drain the fat. Add the onion, garlic, and bell pepper, then stir to combine.

Add the apple cider vinegar, dijon mustard, parsley and salt, then stir to combine.

IMG_7658Boil the dates in water until they soften (about 1-2 minutes). Put the dates, tomato sauce, and tomato paste in a food processor or blender and pulse until well blended. Add the sauce to the sloppy Joe mixture and stir.IMG_7660IMG_7661 (1)IMG_7668

I ate my Sloppy Joe on a russet potato, but you could also serve it on the more traditional bun. Enjoy! 🙂

Paleo Sloppy Joe

Recipe adapted from Physical Kitchness

INGREDIENTS

  • 4 lbs. ground beef
  • 2 yellow onions, diced
  • 1 large green bell pepper, diced
  • 2 (15 oz.) cans tomato sauce
  • 4 Tablespoons tomato paste
  • 6 Tablespoons apple cider vinegar
  • 4 Tablespoons dijon mustard (Annie’s is Paleo/Whole30 compliant)
  • 20 medjool dates, pitted
  • 4 garlic cloves, minced
  • 2 teaspoons dried parsley
  • 2 teaspoons pink Himalayan salt

DIRECTIONS

  1. Brown the meat in a large pan. Drain the fat.
  2. Add the onion, garlic, and green pepper and stir to combine.
  3. Add the apple cider vinegar, dijon mustard, parsley and salt, then stir to combine.
  4. Boil the dates in water until they soften (about 1-2 minutes). Put the dates, tomato sauce, and tomato paste in a food processor or blender until well blended.
  5. Add the sauce to the sloppy Joe mixture and stir.
  6. Cook on medium-low heat for 15-20 minutes, stirring occasionally.
