One Pan Ranch Chicken & Veggies

My life is crazy right now. I work full time and am in grad school, while also attempting to train a 6-month-old dachshund puppy, spend time with my friends and boyfriend, and get my training runs in.

I am loving one pan meals right now. You just throw everything together and only have one pan to clean at the end! Lunches for this week include my One Pan Ranch Chicken & Veggies. You will need chicken breasts, baby red potatoes, baby carrots, fresh parsley, garlic, olive oil, salt, black pepper, and my homemade Paleo ranch seasoning.

Place the chicken, potatoes, and carrots in a single layer on a cookie sheet.

Season with salt and pepper, then drizzle with olive oil. Sprinkle with the garlic and the ranch seasoningIMG_4338 (1)

Bake for 45-60 minutes at 400 degrees. Garnish with fresh parsley.

One Pan Ranch Chicken & Veggies

INGREDIENTS

  • 6 chicken breasts
  • 1 lb. baby red potatoes, halved
  • 1 bag baby carrots (16 oz.)
  • 4 garlic cloves, minced
  • 4 Tbsp. olive oil
  • 4 tablespoons Paleo ranch seasoning
  • 2 Tbsp. fresh parsley, chopped
  • Salt and black pepper, to taste

DIRECTIONS

  1. Preheat the oven to 400 degrees.
  2. Place the chicken, potatoes, and carrots in a single layer on a cookie sheet.
  3. Season with salt and pepper, then drizzle with olive oil. Sprinkle with the garlic and the ranch seasoning.
  4. Bake for 45-60 minutes at 400 degrees.
  5. Garnish with fresh parsley.
