One Pan Lemon Garlic Shrimp & Asparagus

This shrimp and asparagus meal is so simple, yet so delicious! The best part? You only need ONE pan.

You will need shrimp, asparagus, olive oil, ghee (clarified butter), garlic, lemon juice (fresh-squeezed is best!), fresh parsley, salt, pepper, paprika, and crushed red pepper flakes.

Add the asparagus to one side of a cookie sheet and toss with olive oil, garlic, salt, and pepper. Bake at 400 degrees for 8-10 minutes, depending on the thickness.

Remove from the oven and add the shrimp to the pan. Toss the shrimp with the ghee, garlic, paprika, red pepper flakes, salt, black pepper, and fresh parsley.

Bake for 6-8 minutes, or until the shrimp is opaque. Remove from the oven and sprinkle with lemon juice.

INGREDIENTS

For the asparagus:

  • 2 bunches of asparagus
  • 2 Tbsp. olive oil
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste

For the shrimp:

  • 2 lbs. shrimp, peeled and deveined
  • 2 Tbsp. ghee (clarified butter)
  • 2 garlic cloves, minced
  • 1/2 teaspoon paprika
  • 1/4 tsp. crushed red pepper flakes
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced

DIRECTIONS

  1. Preheat the oven to 400 degrees.
  2. Add the asparagus to one side of a cookie sheet and toss with olive oil, garlic, salt, and pepper. Bake for 8-10 minutes, depending on the thickness.
  3. Remove the asparagus from the oven and add the shrimp to the pan. Toss the shrimp with the ghee, garlic, paprika, red pepper flakes, salt, black pepper, and fresh parsley.
  4. Bake for 6-8 minutes, or until the shrimp is opaque.
  5. Remove from the oven and sprinkle with lemon juice.
