Cilantro Lime Shrimp

Cilantro lime shrimp is so tasty, yet so simple to make. Shrimp cooks pretty quickly (2-3 minutes per side), which also makes this a great weeknight meal! You will need 1 pound of shrimp, cilantro, lime juice (fresh-squeezed is best!), garlic, olive oil, cumin, salt, and black pepper. I love the wild Argentinian Red Shrimp from Trader Joe’s. They have a lobster-like flavor and texture and are only $9.99 for 1 pound!

Start by seasoning the shrimp with cumin, salt, and black pepper.

Heat the oil in a large skillet over medium-high heat.  Add the shrimp and cook undisturbed for 2-3 minutes.

Flip the shrimp over and add the garlic. Cook undisturbed for 2-3 minutes.

Remove from the heat and squeeze the lime juice over the shrimp. Add the cilantro and toss to combine.

We ate our shrimp with a simple avocado salad. To make the salad, just toss some butter lettuce with olive oil, lime juice, salt, and black pepper and top with avocado.

Cilantro Lime Shrimp

INGREDIENTS

  • 1 lb. shrimp, peeled and deveined
  • 1 Tbsp. olive oil
  • 4 garlic cloves, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice from one lime
  • 1 tsp. ground cumin
  • Salt and black pepper, to taste

DIRECTIONS

  1. Season the shrimp with cumin, salt, and black pepper.
  2. Heat the oil in a large skillet over medium-high heat.  Add the shrimp and cook undisturbed for 2-3 minutes.
  3. Flip the shrimp over and add the garlic. Cook undisturbed for 2-3 minutes.
  4. Remove from the heat and squeeze the lime juice over the shrimp.
  5. Add the cilantro and toss to combine.
