Lemon-Garlic Chicken w/ Green Beans & Potatoes

When I began the Paleo diet, I started eating at home a lot more. Eating all of your meals at home = SO MANY DISHES.dishes memeOne-dish meals are the best. My lemon-garlic chicken comes together with green beans and potatoes all in one baking dish, so cleanup is easy! 🙂

Start by coating a 4.8 quart baking dish, like this one, with 1 tablespoon of olive oil. Thinly slice a lemon and arrange the slices in a single layer on the bottom of the dish.IMG_3094In a large bowl, combine the remaining olive oil, the lemon juice (fresh-squeezed is best!), salt, and pepper. Add the green beans and toss to coat.FullSizeRender (17)Arrange the green beans on top of the lemon slices. I used a slotted spoon to remove them from the bowl, so that some of the sauce remains in the bowl 🙂IMG_3104Next, toss the potatoes in the sauce, then arrange them along the edge of the baking dish, on top of the green beans.IMG_3106Lastly, toss the chicken in the sauce and place the it in the middle of the baking dish, on top of the green beans. If you have any remaining sauce in the bowl, pour it on top of the chicken.IMG_3107Bake for 45-60 minutes at 400 degrees. I like to turn the broiler on for a couple minutes at the end, so it get’s a little crispy 🙂IMG_3113


Lemon-Garlic Chicken w/ Green Beans & Potatoes

INGREDIENTS

  • 4 boneless, skinless chicken breasts
  • 6 tablespoons olive oil
  • 1 lemon, thinly sliced
  • Juice of 1 lemon
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound green beans, trimmed
  • 8 red potatoes, chopped

DIRECTIONS

  1. Preheat the oven to 400 degrees.
  2. Coat a 4.8 quart baking dish with 1 tablespoon of the olive oil.
  3. Thinly slice a lemon and arrange the slices in a single layer on the bottom of the dish.
  4. In a large bowl, combine 5 tablespoons of olive oil, the lemon juice, salt, and pepper. Add the green beans and toss to coat.
  5. Remove the green beans from the bowl with a slotted spoon and arrange them on top of the lemon slices.
  6. Toss the potatoes in the sauce, then arrange them along the edge of the baking dish, on top of the green beans.
  7. Toss the chicken in the sauce and place it in the middle of the baking dish, on top of the green beans. If you have any remaining sauce in the bowl, pour it on top of the chicken.
  8. Bake for 45-60 minutes at 400 degrees. Broil for the last 2-4 minutes until brown.
